dark ale or stout beer

Preparation
Bring
water
to boil in a medium saucepan.
Add the
potatoes
cut into 1/2 inch pieces and cook until just tender, but not mushy, about 10 minutes.
Drain.
While the potatoes cook, heat the
oil
in a skillet over medium heat.
Add the chopped
onion
,
carrot
cut into 1/4 inch slices and drained
garbanzo beans
.
Saute 5-7 minutes over medium heat, stirring frequently.
Drain the potatoes and add them to the vegetable mixture.
Add the
curry
and 1/2 cup of the
beer
.
Simmer, uncovered, for about 3 minutes.
Add the remaining 1/2 cup beer and simmer another 3 minutes to allow the alcohol in the beer to boil off, leaving its flavor essence in the pot.
Remove from heat and stir in the peas.
Salt
and
pepper
to taste.
Serve immediately.
