  1. In a large saucepan or Dutch oven heat oil
  2. Add the finely chopped onion, the sliced mushrooms and the minced garlic.
  3. Cook, stirring occasionally, until onion is tender. 
  4. Add chicken broth and water
  5. Bring to a boil. 
  6. Add tortellini and peas.
  7. Return to a boil and cook for 6 to 12 minutes or until tortellini is tender.
  8. Stir in parsley.
